Lemon and lime drizzle cake
I love to bake and I thought I would show you how to make this super zesty and delicious cake with a yummy topping! It is quite easy to make and made best with really juicy lemons and limes.
So you will need:
175g of unsalted butter
175g caster sugar
3 large eggs
4 tbsp milk
225 g self-raising flour
grated zest of 1 lime and 1 lemon
for the syrup drizzle:
200g icing sugar
juice of 2 lemons and 2 limes
Preheat the oven to 180c (160c fan/350 f) and line a sandwich tin with extra butter and some baking paper.
Cream the butter and the sugar together in a large bowl with an electric hand whisk until its pale and fluffy. Add the eggs in one at a time, still whisking.
Once the eggs are mixed in add in the milk and whisk to combine then sift in the flour and fold in and add the grated citrus zest.
Then place the mixture in the prepared baking tin and smooth it over then place it in the oven for 50 mins. To make the syrup combine the icing sugar and the juices until you have a runny syrup like consistency.
When the cake is out of the oven, while its still warm poke small holes into the cake so the syrup will soak into the cake, then pour over the syrup and add some grated citrus zest to decorate.
