Raspberry and almond cake

So as I recently made a Raspberry and almond cake I thought I would let you know how to make this delicious cake. With almonds, raspberries and a white chocolate drizzle this cake is heaven!

So you will need:

115g self-raising flour

1/4 tsp baking powder

115g unsalted butter

115g caster sugar

40g ground almonds

225g raspberries (about 2 punnets)

2 tbsp flaked almonds

100g white chocolate

1. Preheat the oven to 200c/400c/gas Mark 6. Grease a 23cm 9inch round cake tin and line the base with baking paper.

2.Sift the flour and baking powder into a large bowl. Add the eggs, butter and caster sugar and beat with an electric hand whisk for 2 mins. Until pale and creamy, fold in the ground almonds.

3.Spoon the mixture into the tin and scatter over raspberries and flaked almonds. Bake in the preheated oven for 25-30 mins.

4. Leave to cool in the tin and turn out into a wire rack. Melt the white chocolate in the microwave and place in a piping bag, drizzle over the cake and sprinkle on some more almonds.
