Lemon meringue cupcakes

So as I haven't done a blog post about baking in ages I thought I would show you how to make these delicious Lemon meringue cupcakes that are so simple and easy to make.

You will need:

110g unsalted butter

175g self-raising flour

110g caster sugar

2 eggs

Juice and zest of 1 lemon

For the icing:

100g butter

200g icing sugar

juice of 1 lemon

Yellow food colouring

Mini meringue sprinkles or homemade meringues

1.Preheat the oven to 180c and line a 12 hole muffin tin with cupcake cases. Then add the butter, self raising flour, caster sugar, eggs and combine with an electric whisk until combined then add the lemon juice and zest.

2. Place the mixture into the cupcake cases, and bake for 10-15 mins until they are golden brown. Leave them to cool.

3. Then to make the icing, cream the butter and sift in the icing sugar then add the lemon juice and the yellow food colouring and whisk. Then put this in a piping bag with a star nozzle and pipe it on the cakes when they are cool and sprinkle on the meringues.
